10 Questions With David R. Carballido

The founder of LALO tequila talks favorite drinks, books, and his go-to thank you gift.

In a world dominated by celebrity-backed tequila brands, LALO tequila stands apart as an authentic celebration of Mexican heritage. Co-founded by David R. Carballido and Lalo González, this small-batch spirits brand, now headquartered in Austin, has become one of the fastest-growing in the US, recently celebrating its fifth anniversary. Born in Guadalajara, Carballido brings his heritage and passion to his work, creating a product that honors tradition while embracing modern Mexico. We sat down with David to discuss his journey, the best thank-you gifts, and all things tequila.

1. How did LALO start and why was going into the world of spirits something that appealed to you?

Tequila is made in Jalisco, where I am from. It’s a part of my culture and we drink tequila more than other spirits because of that. LALO started as something I made for my friends and family; we never planned on it becoming a business but now I get to show Mexico to the world.

2. You’ve partnered up with multiple brands to host NYFW events. Why is that important?

I’m really into fashion because it’s an expression of who you are. It’s a great way to show your culture, where you’re from, how you are with your family and it’s the same with tequila. LALO fits in with these values as it’s a lifestyle brand.

3. Do you have any favorite drink recipes?

I do! Since it’s a very clean product, a simple LALO and soda is my favorite. That way you can really appreciate the taste of the tequila. I’m also a fan of our Paloma. Take ice, and add 2 ounces LALO Tequila, 3 ounces sparkling mineral water, 2 ounces fresh grapefruit juice, 1/2 ounce fresh lime juice, 1/2 ounce agave syrup. Finish off with a pinch of salt and garnish with a lime wedge and you have a refreshing cocktail.

4. What does the future of the brand look like?

Expanding good quality tequila around the world and growing the loyalty of the brand. We’re looking forward to opening new markets across many countries: Mexico and Europe in particular. All we want is to show how the spirit should taste in an authentic Mexican way.

5. Describe the brand in three words.

Authentic, Mexican legacy, and clean! 

5. Are there any flavors that you’d like to try and infuse LALO tequila with?

Not necessarily as a brand. However, I do love infusing flavors for fun with friends. One of my favorites has been hibiscus.

7. Scenario: It’s fashion week, and you’re trying to impress someone at a party. What tequila-based drink do you order that will do the trick?

An Espresso Martini with LALO tequila. A lot of people don’t realise that tequila goes very well with coffee. Plus, you definitely want to be awake during fashion week so you don’t miss anything.

8. What’s the one film, TV show, or documentary you think everyone should watch and why?

Definitely The Secret by Rhonda Byrne, movie edition. Manifestation and vision boards are very important to me, so I re-watch this every other year. I believe it shows the power of putting things out into the universe. Also, one of my favorite books is Many Lives, Many Masters by Dr Brian Weiss. I always have it in my car and give it to people I know. It’s about what happens after life and why you connect with some people more than others. 

9. What’s your favorite thank-you gift?

I usually send flowers, but more recently, I’ve been gifting glassware, something for the bar! I always make sure there is a hand-written note too. One of my friends really liked whiskey, so I sent him two gorgeous whiskey glasses. It doesn’t necessarily need to be expensive, but something thoughtful and personal is the best.

10. If you had to bring only three things to a desert island, what would they be?

It would have to be my husband, my 4-year-old dog Pancho, and my camera. I used to love photography, and I even took classes. Recently, I’ve been trying to get back into it, and it’s been bringing me a lot of joy.
